Isomerised Kettle Extract (IKE)
In IKE, the α-acids have now been isomerised to IAA, the soluble isomer which makes beer bitter.
The product is similar in appearance to the original CO2 extract but is slightly more mobile, and still contains the hop oils, waxes and beta-acids present in the original material. This product is well rounded and easy to use in place of whole hops, pellets or CO2 extract.
When we produce IKE we achieve a alpha-acid to ISO-alpha-acid conversion of 97%.
We can manufacture either generic IKE, or varietal specific batches of IKE to preserve the character of the original hop extract.
