Potassium Isomerised Kettle Extract (PIKE)
Using IKE (find out about IKE here) can typically result in brewing utilisation rates of 45-55% of the IAA in this form, a good increase over non-isomerised products. Although this is a significant enhancement over the use of CO2 extracts, we can do even better – and this is where PIKE comes in…
JRM can manufacture a flowable product containing potassium salts of isomerised kettle extracts (called PIKE). The resultant product has wax removed but still contains hop oils and beta acids but the IAA is even more soluble, offering upwards of 60% utilisation for brewers.
As an added benefit of the increased solubility and utilisation, brewers may decide to add this product to the whirlpool or even later in the brew so there is some increased aroma imparted too.
We can also manufacture varietal specific batches should you or your client require a specific hop for their application.
-
PIKE offers over 60% utilisation of isomerised alpha acids (IAA), allowing brewers to achieve the desired bitterness using less raw material.
-
The potassium salts improve IAA solubility, enabling later additions in the brewing process for enhanced hop aroma and flavour.
-
PIKE can be produced in varietal-specific batches, giving brewers control over the hop variety and resulting flavour profile.
